Happy Friday everyone! What better way to start the weekend than with a great new recipe . One of my favorite ways to start the day is with a healthy, protein-packed breakfast. This recipe only takes about 12 minutes to make, and is packed with enough fiber to keep you full and fueled for hours. Best part of all they taste just as good as the traditional fluffy white pancakes. What more could you ask for in a breakfast?!

FLUFFY CHOCOLATE CHIP PROTEIN PANCAKES
Prep Time: 5 minutes
- 1 cup oat flour
- 2 scoops your favourite protein
- 3 tbsp. chia seeds
- 1 tbsp. baking powder
- 1 tsp. vanilla
- 1 1/2 cups almond milk
- 1 1/2 tsp. cinnamon
- 1 tsp. apple cider vinegar
- 2 tbsp. honey
- a hand full of dark chocolate chips
Heat a non-stick pan over medium. First combine dry ingredients together in a large bowl. Next add the wet and mix until smooth. Fold in the chocolate chips then spoon the batter into the heated pan as you would any other pancakes. These will take a bit longer to cook than other recipes, depending on the thickness – you can try flattening them a bit when pouring into pan.
*Serve alone or top with fresh fruit and yogurt or a drizzle of maple syrup.
